The Dinner Party – Introduction

Tomorrow night I’m hosting some friends for a long overdue get together. My “cousin” (I use quotations as we are family both being Greek and having grown up together, but we’re not blood related) and his girlfriend live here in Hackensack just a few building away from my own but we NEVER see each other. There is another couple they are super tight with that I also have known for years and wanted to hang out with, so we organized a get together and I agreed to host.

My cousin, God bless him, loves my cooking, and because he is always eager to see what I’m going to make next, I like to please and make some fancy shmancy stuff.

This is  what I decided for the menu –

  • Hors d’oeuvres – assorted cheeses, hummus with pita chips, pretzels with French onion dip, Greek sausages
  • Roulade-style Chicken stuffed with Basil Pesto, Proscuitto, and Fontina with Beurre Blanc and Egg Noodles
  • Bacon and Onion Brussels Sprouts
  • Sauteed Broccoli/Cauliflower/Mushroom Mix
  • “Anna” Salad
  • Cheesecake Brownies

As with any dinner party, it is highly recommended to do as much as you can ahead of time. This evening I prepped the chicken, made the sauce, and blanched the vegetables. I’m going to spend the next few posts highlighting recipe by recipe.

Frosting on the Fly



I am headed to my friend’s house this evening for dinner and I offered to bring dessert. As has been the case lately, I raided my pantry for what I can make from scratch without going to the store, and I was able to make chocolate cupcakes with cream cheese frosting.

Everything was working according to plan. For the cake, I halved this recipe from All Recipes, and used my mini muffin pan. Now I don’t own a fancy stand mixer, never have. I’m not against them, they are just an expensive purchase that I’m saving for marriage or lottery winnings if that day ever comes (it will look fab with my Vera Wang china, yes, I have a china pattern picked out…I’m 32, I’ve had time to think about this stuff, back off). I’ve also found for most recipes, I simple electric hand mixer works just fine. I went to plug mine in and finish mixing up the cake and found out the hard way in the middle of a dirty kitchen and a time crunch that it was broken. I managed to finish the cake batter by hand, but the frosting was going to be a different story. Continue reading

Rice

One of my favorite things in the world to eat is a really good basmati rice pilaf. I don’t even need sauces or meat or beans, I’m content just with the rice. In my world, a really good pilaf has tender but almost al dente grains, is not fluffy, and the grains don’t stick together. I have been trying forger to master this to no avail. Continue reading

Semi Homemade Turnovers

I’m headed to a dinner party this evening and I want to bring an appetizer. I am a little pressed for time, so I want it to be tasty but time efficient. I will go to my standard mixture and also channel a bit of my inner Sandra Lee to create these turnovers:

Monday Night Mac

Much like my Friday Night Dinner for One, I wanted to utilize ingredients in my fridge without hitting up the grocery store unnecessarily. I had close to a half gallon of milk that was going to expire in a couple of days (living alone and working mornings, I was never going to drink it), and some cheese that was probably on the verge of molding. I knew it was mac and cheese time.

Fried Buffalo Chicken Ravioli

Growing up in New Jersey, fried ravioli has been a longtime staple in my life, first introduced to me at practically infancy at Nellie’s Place in Waldwick, and revisited at countless pizza and Eye-talian joints around the area. It was always such a standard – cheese ravioli, breaded in Italian seasoned breadcrumbs, fried, and served with marinara.

Disdain for Truffles

I’m going to say what a lot of foodies do not want to say. I hate truffles. Those ridiculously expensive (up to $2000 a pound), pungent fungi that permeate and overpower every food they touch. I do not like the flavor, I certainly do not like the price, and I cannot justify what makes them so great.

Friday Night In – Dinner For One

The work week is winding down. Well, my Starbucks work week is. I still have work at 7:00 a.m. tomorrow morning and today kicked my butt. I was tempted to go out for shabu shabu with some friends, but sadly I did not have the energy for a city trek. After work and the gym, I felt the need to be somewhat healthy but with all the hours I’ve been working lately combined with my social life picking up (yay!), I haven’t had much in my fridge (very sad my fresh mini pierogis that I bought a couple of weeks ago were covered in mold…but not surprised). Luckily I keep my pantry and freezer somewhat stocked, essentially for nights like tonight.
